Cinnamon Love Cookies

Hi everyone!

I made these cookies a while ago and ever since I made them I just love cinnamon even more. The warm, earthy smell that floods the kitchen while these beauties bake is just incr-edible. They are pretty easy and straightforward and turn out absolutely crunchy and deLizghtfully dunkable. The fun part is that you can decorate them however you like. I used while chocolate and colouring to decorate them and absolutely loved the ombre effect!

You will need:

1 cup white caster sugar

1⁄2 cup butter/margarine

1 1⁄2 cups self-raising flour

1 egg

1 tsp vanilla extract

1 1⁄2 tsps cinnamon

1 tsp baking powder

1⁄4 tsp salt

Preheat the oven to 180° C or 350° F or gas mark 4.

In a bowl mix your dry ingredients: flour, cinnamon, salt, baking powder. Leave aside and mix the wet ingredients in a second bowl: start by mixing butter and sugar in a bowl for a few minutes until fluffy. Add the egg until creamy and incorporated. Lastly, add the vanilla.

Add the bowl with the dry ingredients, folding gently until incorporated. At this point, it would be better to leave the dough to rest. It is not a crucial part, but it will make the dough easier to shape. Cover and refrigerate for 30-40 minutes until firm. Then, start shaping in balls or use cookie cutters like I did!

Make sure you leave enough spacing between the cookies, grease your pan or line with baking paper.

Bake at 180° C or 350° F or gas mark 4 for about 11 minutes. Make sure you watch them to notice the edges turning brown.
