Tortilla de patatas

Hi, dear people! It's been a while and I'm back with fresh, tasty ideas, so I hope you are ready for some deliziousness. I've been daydreaming about travelling and trying new dishes and then a friend visited from sunny Barcelona, so I thought... Why not bring wonderful Spanish tastes to my kitchen? We made (and oh, enjoyed!) one of the most famous dishes of the Spanish cuisine: tortilla de patatas or Spanish tortilla. It is basically a thick omelette with thin-sliced potatoes, onion and eggs. So, as we're waiting for lovely Spring to come, make some tea and grab your frying pan!

You will need:

400 gr potatoes

5 eggs

1 onion

olive oil

salt

large frying pan with a lid

a plate as large as your pan!

Peel and cut the potatoes in thin slices and do the same with our lonely onion.

Pour enough olive oil to cover the bottom of the frying pan and allow it to heat up. When the oil is hot enough to fry, pour the potatoes and the onion into the pan and add salt to taste. This is not traditional frying, we need the potatoes to soften, so lower the heat and be patient. Cover the pan with the lid and be careful to stir occasionally. This can take up from about 20 to 30 minutes, but it depends on your stove really. I have a gas stove, which is stronger and quicker than an electric hob, so it took me less.

When the potatoes are soft enough and become mushy when your stir them, remove the pan from the heat. In case there is much oil left, strain the potatoes through a colander.

Break the eggs into a large bowl, add some salt and beat them lightly, like you would do with an omelette. Then, pour the potatoes into the bowl and stir so that they are well incorporated together. Use the strained oil to heat the pan once more and pour everything into the pan. Fry with medium heat and use a spatula to shape your tortilla.

Now here's the tricky part. We need to turn the tortilla over so that it can cook on both sides! You will need a big plate which you will place on the pan. Then, with a swift move, flip the pan over on the plate and then carefully slide the tortilla back into the pan. On my facebook page, you will find a funny video where I succeed in turning the tortilla over, even though the pan was quite heavy to hold with one hand! I had so much fun doing it!

Amazing taste straight from the Mediterranean! This recipe is so filling on its own that it doesn't need any other condiments or additions. You can have it with some pan con tomate, which is toasted bread with tomato, olive oil, garlic, and salt. Good luck!
